Rapid-Response Meal Solutions for Large Relief Operations

 At The Caterer Disaster Relief Catering, we specialize in rapidly mobilizing large-scale food service operations to support emergency response and relief teams. Our expertise lies in accommodating sizable crews with immediate needs, delivering efficient, high-volume onsite food preparation and fresh, nutritious boxed meals. Whether stationed at a disaster zone, staging area, or command center, our team is equipped to implement prompt, reliable catering solutions that keep your teams fueled and focused when it matters most.  


Catering options include:

  • Up to a 40' x 20' Tent, Tables and Chairs
  • Breakfast, Lunch and Dinner
  • Salads, Entrees, Snacks & Desserts
  • Tableware, Cutlery & Condiments
  • Handwashing Stations

(Client provides dumpster and restrooms)


All food items are contingent on availability, and subject to change.

Vegan and vegetarian options are available with prior notice.


Service Options

Breakfast Buffet

Scrambled eggs, sausage gravy and buttermilk biscuits, bacon strips (2 per person), sausage links (2 per person), hash browns and fresh-cut fruit.


Boxed Breakfast To Go

Breakfast burrito with eggs, sausage, and American cheese. Hash browns and fruit choice (1 per person) of an apple, banana or an orange. Cutlery kit and ketchup packets included.


Cold Boxed Luncheon

Cold boxed lunches to be picked up at breakfast time, prior to leaving the base-camp for the day. Boxed lunches come with a bag of chips, and your choice of a hoagie or wrap (1 per person) of turkey, ham or roast beef (with lettuce, tomato and cheese, mustard and mayo packets) and two cookies. Napkin included.


NIGHTLY ROTATING DINNER BUFFET

All food items are contingent upon availability, and subject to change. Notice required for vegan and vegetarian options. Below are a few of our sample menus:


Monday: Chicken Gouda Mac

Garden salad with dressing, chicken Gouda mac & cheese, garlic bread and chef's choice dessert.


Tuesday: Fajita Bar

Flour tortillas, fajita steak, grilled chicken, grilled shrimp, shredded cheese, shredded lettuce, Spanish rice, and refried beans. Toppings include: pico de gallo, jalapenos, and sour cream. Chef's choice dessert.


Wednesday: Pot Roast

Garden salad with dressing. Pot roast with mashed potatoes and gravy, candied corn, King's Hawaiian rolls, and chef's choice dessert.


Thursday: Barbequed Chicken

Garden salad with dressing. Bone-in barbequed chicken (2 pieces per person), pork and beans, mac & cheese, King's Hawaiian rolls. Chef's choice dessert.


Friday: Shrimp Scampi

Garden salad with dressing. Shrimp scampi with rice pilaf, vegetable medley, garlic bread and chef's choice dessert.


Saturday: Pulled Pork Dinner

Pulled pork with baked beans, macaroni & cheese, coleslaw, King's Hawaiian rolls and chef's choice dessert.


Sunday: Lasagna

Garden salad with dressing, meat lasagna, garlic bread and chef's choice dessert.

All options are subject to availability.
